In less than a year, the two largest food-and-drink projects in Isla Verde both opened inside hotels. Hyatt Centric San Juan Isla Verde opened on December 17, 2025, in the building that used to be the Verdanza. In August 2026, the old Courtyard down the beach finished a roughly $38 million conversion into the Marriott Isla Verde Beach Resort and rebuilt its restaurant, bar, café and kitchen in the process.
On paper, both projects are about guests. The details tell a second story. The hours run well past what a hotel guest needs, the reservation pages are public, and one of the restaurants describes itself as designed for locals as well as travelers. The new sit-down dining in Isla Verde sits behind hotel lobby doors. For someone who lives a few blocks away, the useful question is which of those doors open for a neighbor and on what terms.
Twenty-Three Years as a Courtyard, Then a Different Hotel
The Marriott conversion is easier to understand with the building's history in mind. It was the Holiday Inn Crowne Plaza until Hurricane Georges damaged it in 1998 and closed it for four years. It reopened as the Courtyard by Marriott Isla Verde Beach Resort on January 7, 2003, after a redevelopment of about $28 million. The latest project ended more than 23 years under the Courtyard brand. It moved the 260-room property into Marriott's full-service namesake brand and covered every guestroom and suite, the lobby and bar, the café, the kitchen and the Meso restaurant.
In practical terms, a hotel that used to serve mostly overnight travelers is now pitching itself to groups, conventions, weddings and events. According to the owners, Puerto Rican architects, designers, contractors and artists worked on the renovation, and Puerto Rican identity was built into the design, the artwork and the food. "This investment is a commitment and a vote of confidence by our owners in Puerto Rico, in Isla Verde and in the potential of the tourism industry," Peter Hopgood, president of International Hospitality Development, told News is my Business.
Meso Is the Dinner Reservation the Strip Didn't Have
The centerpiece of the conversion is Meso. Platea wrote about it on October 2, 2026, and described an evening that starts with sparkling wine at sunset on the beach and continues with Mediterranean cooking with Puerto Rican touches. The wine cellar holds more than 1,600 bottles across 220 labels. A team of 34 runs the restaurant, and executive chef David Serrano wrote the menu.
The kitchen staff goes back a long way. Sous chef Ángel Santiago trained under Serrano 30 years ago at the restaurant in The Ritz-Carlton, and he describes the Puerto Rican side of the menu as "the herbs we use, the cooking techniques we work with." Platea's tasting, paired by sommelier Ish Rivera, covered these dishes:
- Shrimp and artichoke fondue with toasted bread, paired with a Martín Berdugo Verdejo
- Watermelon, tomato and feta salad with champagne vinaigrette, paired with a Garzón rosé
- Branzino almondine over mashed potato, with a mash that changes daily, paired with a Garzón Reserva Albariño
- Red wine flan, a fruitier version of the Puerto Rican classic
Santiago's own picks are heavier: wild boar ragù pappardelle, lamb shank over wild mushroom risotto, and short ribs over four-cheese gnocchi. Marriott's own description of dinner adds open-fire cooking. The Meso listing on OpenTable says the restaurant is designed for locals as well as travelers, and anyone can book there.
The Hours Tell You Who These Kitchens Expect
A hotel restaurant built only for guests serves breakfast and an early dinner. The posted hours at these two hotels go well beyond that. Here is what Marriott and Hyatt currently list:

Café Colao serves coffee until 10:30 at night. Destilado keeps pouring until 1 a.m. on weekends. Marriott describes Destilado as a cocktail bar inspired by distillation, with signature drinks and small bites. Between the two hotels, there is now somewhere open for coffee, lunch, dinner or a late drink from 6 a.m. until after midnight, all within a short walk along the beach.
These hours change, and the listings already disagree with each other. Hyatt's opening announcement gave Espresso Lab's hours as 6:30 a.m. to 6 p.m., while the current page says 6 a.m. to 8 p.m. Marriott and Platea list Meso's dinner until 11 p.m., and OpenTable says 10 p.m. Check the night you plan to go.
ALBA Covers the Daytime Meso Doesn't
ALBA, on the ground floor of the Hyatt Centric at 8020 Calle Tartak, fills the hours when Meso is closed. Hyatt calls it an all-day modern bistro serving comfort food with global influences and roots in Puerto Rican tradition. Executive chef Efraín Cruz runs all of the hotel's food and beverage, including events and banquets.
The current menu is full of local references: pork belly bao, gandul hummus, a ropa vieja quesadilla, and a lobster roll named after Playa Jobos. OpenTable tags ALBA as good for brunch and lists happy hour as an amenity, but it doesn't post a happy-hour schedule. Until one appears, call ahead before planning an evening around it.
Each Door Has Its Own Entry Terms
The kitchens are open to the public in different ways. As of early October 2026, the published terms look like this:
- ALBA. Hyatt recommends reservations and accepts walk-ins when there's room. The hotel FAQ also tells non-guests to confirm the restaurant access policy before coming.
- Meso. You can book on OpenTable, and the listing says it was designed for locals as well as travelers. It doesn't say how walk-ins are handled.
- Vivo Beach Club. Hyatt guests get Vivo access through the hotel's destination fee, plus a free shuttle. For everyone else, Vivo advertises day passes, cabanas, memberships and ticketed shows, but it doesn't publish day-pass prices or say whether you can come just to eat.
Meso and ALBA are the easiest to plan around, because you can book both online. Vivo takes the most homework.
Vivo and Ocean Lab Hold the Weekend Calendar
The hotel restaurants cover dinner. Vivo Beach Club has the concerts and weekend events. Hyatt describes Vivo as having four restaurants and bars, three pools, Ocean Lab Brewing Co. and an outdoor concert stage. The Ocean Lab taproom is at 7000 Carr. 187 in Carolina. It's open 11 a.m. to 10 p.m. Sunday through Thursday and until 11 p.m. on Friday and Saturday, and the phone number is 787-648-5655. The beer list includes a Blonde Ale, American Wheat, Pale Ale, IPA, Sunset Amber and SJU, plus rotating releases sold on tap, in to-go cans and in nano-kegs.
Vivo's posted calendar for the rest of 2026:
- October 10, 8 p.m.: Indie Lab, with Los Walters, Del Toro and Lockward
- October 17, 7 p.m.: El Bailao, with Wilfrido Vargas and El Gran Combo
- November 15, 11 a.m. to 6 p.m.: Christmas Bazaar, a holiday market with local vendors
Vivo lists these as individual events. It doesn't post a weekly schedule for music nights or markets.
Off the Strip, Everyday Food Keeps Growing
The hotel openings set the high end. Two smaller 2026 openings fill in the everyday meal. Restaurante Doña Ana opened its second location at Isla Verde Mall on April 16, 2026. Owner Rubén Rodríguez cooks recipes he learned from his aunt, including bistec, chicken fricassee, pork chops a la jardinera, bacalao serenata and asopao.
In September, Taco Maker opened its first Isla Verde restaurant at La Plazoleta on Avenida Isla Verde, an investment of about $300,000 that brought the chain to 82 locations on the island. It has self-order kiosks, a drive-through, web ordering, and delivery through Uber Eats and DoorDash. The company told El Nuevo Día the store would create 15 to 20 direct jobs.
Isla Verde now has a full range of places to eat, from asopao at the mall and tacos at La Plazoleta to Meso's branzino and Destilado's cocktails on the beach. The places at the top of that range are reached through a hotel lobby, and booking ahead is the most reliable way in.
